Chilled Marinated Cauliflower

  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 cup water
  • 3 large garlic cloves, minced
  • 3/4 tsp. salt
  • 1 tsp. whole peppercorns
  • 2 bay leaves
  • 1 medium cauliflower
  • 1/2 finely minced red onions
  • 1/2 minced fresh parsley
  • a handful minced fresh basil
  • 1 medium carrot, grated
  1. Combine oil, vinegar, water, garlic, salt, peppercorns, bay leaves and cauliflower in a large saucepan.  Bring to a boil, reduce heat, cover and simmer for about 15 minutes.
  2. Transfer to a serving bowl, cool.
  3. Shortly before serving, stir in onion, parsley, basil and carrot
