- 1 fennel bulb
- zest and juice of 1/2 lemon
- 1 tbsp. honey
- 1 few splashes of olive oil
- sea salt and ground pepper
Slice fennel bulb as thinly as possible. Whisk together the lemon zest and juice, honey, olive oil, salt and pepper. Toss the dressing with the fennel.

- 2 tsp. red wine vinegar
