For the love of food
- 8-12 slices of bacon, chopped
- 1 small onion, finely chopped
- 1 red bell pepper, cored, seeded and finely chopped
- 2 (540mL) cans red kidney beans, drained and rinsed.
- ½ cup barbecue sauce
- ½ cup maple syrup
- ½ cup ketchup
- 2 Tbsp Dijon mustard
- 2 Tbsp soy sauce
- 4 Tbsp Worcestershire sauce
- 4 Tbsp brown sugar
- Preheat oven to 350ºF. Spray a 9 x 13 baking dish with cooking spray.
- In a large skillet, fry bacon until almost cooked. Remove to a small bowl. Drain fay leaving ¼ cup in pan.
- Add onions and sauté until softened. Bring bacon back to pan and stir in all other ingredients. Simmer for 5 minutes.
- Pour into prepared pan and bake for one hour. Remove from oven and stir. Serve as a main dish or great side to ham.
