- 1 clove garlic, chopped
- 1 knob fresh ginger
- 2 tsp. mirin or pinches of sugar
- 1 tbsp. white miso
- 1 tbsp. rice wine vinegar
- 1 tbsp. sesame oil or neutral oil
- 1 tbsp. toasted sesame oil
Pound garlic and ginger in mortar until very smooth and then stir in sugar, miso, vinegar, sesame oils and 1 tbsp. water.
