For the love of food
- 2 cups all-purpose flour
- 1 cup oats
- 3/4 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 cup orange juice
- 2 eggs
- 1/3 cup vegetable oil
- 1 tbsp. grated orange peel
- 3/4 cup chopped cranberries
- 1/2 cup chopped nuts (optional)
- Heat oven to 350
- Grease and flour bottom of 9×5″ loaf pan
- Combine first six ingredients, mix well, set aside
- Beat orange juice, eggs, oil and orange peel
- Add liquid to dry ingredients, mixing only until moistened
- Stir in cranberries and nuts
- Pour into prepared pan
- Bake 60-70 minutes
