Cranberry Orange Bread

  • 2 cups all-purpose flour
  • 1 cup oats
  • 3/4 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 cup orange juice
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 tbsp. grated orange peel
  • 3/4 cup chopped cranberries
  • 1/2 cup chopped nuts (optional)
  1. Heat oven to 350
  2. Grease and flour bottom of 9×5″ loaf pan
  3. Combine first six ingredients, mix well, set aside
  4. Beat orange juice, eggs, oil and orange peel
  5. Add liquid to dry ingredients, mixing only until moistened
  6. Stir in cranberries and nuts
  7. Pour into prepared pan
  8. Bake 60-70 minutes
